There is a new version of flash being ported to uiq3 that will support youtube on the browser
Core Player 1.25 introduced youtube playing, not the opposite. However, it stop working in the last weeks, something that will be fixed on the upcoming 1.3
And to get thins straight, opera 8.65 always supported flash, however only recently the necessary pluggin appeared
Opera 9.5 only plays flash localy, this will be fixed on next version

Does that mean it was possible to watch Youtube videos on our UIQ3 phones via GPRS/3G/WiFi until last week (or whenever Youtube changed that 'something')?

We are taling about FLV youtube, because i can watch youtube via RTSP/3GP right now through their mobile site (m.youtube.com), using opera 9.5 or 8.65. And it works with WIFI/3G/GPRS...when it does not work, its because of lack of rooter configuration...
But the quality achieved with Core Player/FLV decoding was MUCH better...so i´m waiting anxiously for version 1.3
