sonyericsson P series & walkman phones will ask you on start up if you want the flight/walkman/offline mode or not but with nokia the phone will 1st switch on & then you can switch over to offline mode by pressing the power button & choosing the offline profile.
i am not sure if it is still the same with the newer nokia phones. [addsig]

Some phones do allow this to happen without the power on/off at all.
I'm definitely sure the Nokia 6300 allows this and with access to normal phone functions, bar calling/texting/web browsing.
There are a fair few more handsets that are capable of this

Yes, at this stage SE have chosen to use the turn off and on method of choosing flight mode. I'm not sure why, it seems short sighted since casual use of flight mode is effectively wiped out with that method.

It may be that a whole redesign of the circuitry or software is required to enable flight mode aka "Nokia" style.

Hopefully they will offer it soon. Since K800, you can press power button on K800 to select profile, but unfortunately "flightmode" is not an option in profile settings.

Flightmode is very convenient and just 2 steps away from standby in SE smartphones so far. I can either tap on the signal icon and choose 'flight mode' or press the power button and choose 'flight mode' instead of 'turn off'. I've made use of it on flights without any problems so far. Be it for pictures or watching movies, it's a great and convenient feature, especially on my P990. Hmm...I'm starting to sound like an SE ad

@mode, I indeed thought that was the case with SE smartphones, but @ftyk indicated that you had to turn it off first.

I'm relieved that atleast SE smartphones can enable flight mode without a restart. That means I can look forward to this ability when I get my G900

Yes, in that tradition G900 should provide you that convenience, I'm counting the days for it be available myself. It's for my wife though since I don't find it to be an upgrade from my P990

I've flown in Delta many time and I had no problems using my SE on flight mode. So I think it might fine in other Airlines.

why does selection of flight mode cut off even bluetooth?
bluetooth would be harmless when switched on in a plane, wouldn't it? [addsig]

Because bluetooth, like a phone's network frequency, is electromagnetic and electromagnet waves interfere with the navigational equipment on a flight.
