I wanted to end my contract with the cpw (o2) and thought it would be just a case of phoning them up and cancelling. But for some reason they need me to write them a letter and send it to them. This means they are prolonging my contract as it will take longer for them to receive my letter and respond back (meaning they will get another months fee out of me). Why cant they just do it over the phone???

All Uk service providers require you to write in giving at least 30 days notice to end a contract. This is written in your contract that you signed when you first took it out. If you are going to another network then ask them for a PAC number which lets you take your old number to your new network. This you can do over the phone and it takes a couple of days.

Can you not just fax them (maybe a bit late now - 5pm...)?

when i wanted to cancel my contract with o2, i just emailed them saying how do i go about doing it, and then replied saying "a customer service member will contact you shortly" so i waited a week and heard nothing, so i emailed them and they said duno why no one contacted you, and my contract would end on the 17th, simple as that!
