Is there a way to hide your number constantly when making calls on the t68i, without having to check the feature "hide your number" every time when making a call?

This feature depends on your operator services: I have my number always hidden. Only when I want to show it, I have to select show number in context menu. Ask your operator's customer care support line!

Well I never answer my phone to withheld numbers. If people are going to with hold there number I dont want to talk to them. If they have something important to say they can leave me a voicemail.

Look, I work as head of technical and marketing department on local subsidiary of one famous computer maker. I had lot of stupid questions from resellers, ad agencies etc. Yes, during weekends too. So I decided to have 2 phone numbers: one public, second secret. And of course, secret number is hidden. Public number is available for everyone and is off during weekends, vacations, meetings or events.
