I have a SE Z600, its got Vodafone IRL branding. I will be in Switzerland for a period of time and using a sunrise card in the phone. (The phone is allready unlocked). Does any one know somewhere preferably near Zurich where I can get the phone flashed to SE firmware.

Also does the phone or the SIM card hold the info for GPRS and WAP.

All the info about GPRS and MMS connection don't get lost during upgrade. You phone is branded. But does this mean you have a special SW on it? If so I don't know if in Switzerland you will be able to upgrade it.
Else I guess there will not be any problem. The SW available here (at least for my t610) has the following languages: Italian, English, German and French. Unfortunately I don't live near ZH so I couldn't tell you where you should go exactly.

But I am pretty sure you can find a place that will do the upgrade.

There are different language packs available for the firmware. You just have to tell them what languages you want (if the service people don't ask you).

dealer locator used to tell you where the service points are, but it seems they stop doing that for most countries, except UK. Following are links in German and French for Switzerland:

The phone holds the GPRS and Data Account information. Flashing USUALLY won't wipe out the information, but occasionally they have to do a master reset, in which case you lose everything.
