Does anyone know where I can find a full list of what accessories cause the profile to change and what profile it changes to..? Thanks

The only other one which gets set by an accessory is the profile 'TTY Accessory' but I cannot tell you what actually sets that one though some have said the chatboard but I don't recall seeing that when I tested my chatboard with the T610 (and don;t have it on me now to check again) Unless I'm very much mistaken...
