I'll be traveling to Portugal next month and would like to be able to connect via GPRS to the internet and my emails. I have VoiceStream here in the States. I'm not sure which carriers my phone will roam to in Portugal. Do I need to set up another profile? If so, can anyone help me with the settings? Will I even be able to do this?

when it comes to roaming, network operators usually doesn't allow roaming users access to their gateways... yeah, it sucks... unless you find a operator that has an open gateway, but I doubt it, most operators only allow their own users access...

so you'll have to connect through the gateway on you local operator in US.

I suggest you check what operators in Portugal you can use (which is probably listed at your operator's website) and send them an email asking if they have their gateway open for roaming users.
