Ok, for some reason the demo app doesn't show up in the application uninstall list. Can I just use file explorer to delete the 'demo' folder or will this cause issues on my P800? Basically how does one manually do an uninstall?

Just as you said, delete it with a filemanager, it doesn't cause any errors in the handling. |

Just re-install the thing into your P800 again after that un-install it. |

Tip always install applications on the memory stick, and media on the phone, because if there is such a problem you can wipe it clean and not mess with the p800's OS
