As a mobile phones OS, Symbian wins hands down

...

As a PDA OS though, the Palm operating system wins, on the amount of apps alone. Symbian is a more mature OS though, with semi multitasking abilities and such, but with the new Palm OS coming out soon, I think it will be king of PDA again, even in comparison to PPC.

I do not own a Palm by the way, never have.

I think Symbian(Epoc before that) is the best, most stable handheld OS out there.
The limited amount of software available for the P800 is simply because Symbian 7 is brand new, and with the speed Symbian 7 apps are being developed right now it won't take long before it catches up with the others.
Just take a look at the incredible amount of apps available for Symbian 6.1.

But no Bluetooth. I will not buy another phone without Bluetooth.

Sync'ing while in my pocket is too cool.
