Try and not cup your hand around the bottom of the phone where the tiny microphone hole is. I also had the same problem before I got my P800 upgraded, the later firmware versions seem to fix this problem. The sound quality did improve quite a bit so I would recommend looking up a SE service centre and getting it flashed, it shouldn't take more than 45 minutes.
