I got a missed call, and I checked it out in the call log, how do I add it to a name or save the entry with flip off?

In Flip off mode -
Go to phone application shortcut, the default screen will be the speed dial thingy, on the lower left corner just above the network indicator icon, you should see a icon/button for speed dial and to its right the phone log icon. Tap on the phone log icon, you should see a list off all your call activity (you can sort this by missd calls if you want). Tap on the missed call number that you want and you can either 1) Phone/Add Entry to create a new one or 2) Edit/Copy Number and then paste it to an existing contact entry.

Alternatively you may want to turn on "Add to Contacts" in the Phone application preferences to prompt you to add new number who call you.

At any rate, this is how i do things, there may be faster ways to do things seeing i just got my P800 for 5 days.
