is it posssible to use the save/cancel or back key on the touch screen with tapping on the screen?

Hehe yes, the back button on the side should do the trick.

Cause you did mean with_out_ tapping the screen or? Otherwise you just tap the button on the screen

Back key work better than the back button on the screen. Also holding the back key longer will get you to standby (during running an app) or lock the phone (if pressed during standby).

But you'll never know for sure, maybe the back button do a master reset on your phone, or something

Nice joke. Why would put master reset button? OK, you might need it on early P990 (as it is full of bugs).

It is useless DURING setting the theme or doing another operations. But hey, nothing is useful during setting a theme.
