I use Theme Creator to edit themes, well I did until I got a V640i which isn't listed in v3.19 
You'll find it in the Developers section of the SonyEricsson dot com website.
While your there check out the White Paper on whatever phone it is you have - makes very interesting reading...

@carkitter: Is there no simlar phone you can make a theme for that will work with your V640i? In fact, try a W910i theme, it may work!

Creating/editing themes is very easy with Sony Ericsson themes creator... Just make sure you have the latest version which supports all the  phones.
