What applications do I need to easily edit the tags of my tracks? I really want to organize the songs on my phone.

afaik, no phone can do this. even with a symbian phone.

Tag&Rename: 30 days free, just awesome. Lets you edit your tags as well as album art. Just make sure that whatever music software you use doesn't automatically edit your tags according to what websites, such as Amazon, have on them. It took me about 2 weeks to edit each of my files (~6000), could've done it in about 15 hours if I went non stop. I use iTunes for now, and once I finished I downloaded MediaMonkey to see if changing my tags worked, and everything seemed nice and organized, but MM changed the tags slightly by itself because I think that it uses Amazon to edit them, and I did not look into that before I imported my files. Anyway, MM is great, $30, but 30 days free.

edit: just checked WMP and it was automatically updated to the info I put in. 15 hours of pain, and from here on in I never need to change the ID3 tags again, except for new files of course.
