No, media player/walkman version cannot be changed... You can change the skin only to make it just LOOK like walkman or etc... But that won't change anything of it's functionallity. It will remain the same...
For your K750 you can look for KD player, which seems to be very good piece of software... FIrst you need to patch your phone to remove the "read/write user data permissions asking" and then install the player... It is a java player, but still much better than the K750 built in media player in my opinion... In fact I use that with my K800@810 instead of the built in player...
Tutorial for patching, patches and the KD player (including skins for it) can be found on http://www.se-nse.com
And I almost forgot... If you hate KD player so much you can install a WALKMAN in your K750... You have to flash it with W800 firmware and you will have a fully functional and working W800... You know the W800 has the Walkman 1.0 player, you will also get flight mode option, but you will lose the K750 activity menu...

There are several versions of media players...
The default K750 media player and in fact the first media player from since it appeared in the K700 (k500 and similar models)...
Walkman 1.0 was introduced with the release of W800 - 's first walkman phone...
Walkman 1.1 was a slight improvement built in the W810... It has the "All" options in the artist folder of the Walkman... and it's name in the main menu is branded (has the walkman logo)...
Walkman 1.2/1.3 (i'm not 100% sure) is used in the cybershot phones, the K series, S series and the T series... It is the same as Walkman 1.1, but with changed skin, stereo widening option and limited playlist and songs management options, which makes the search of songs much harder than ever... Version 1.3 was released with the K770, which seems to be EXACTLY THE SAME as the 1.2 (k800 media player). They only changed the skin...
Walkman 2.0 was released at the same time with Walkman 1.2 and while 1.2 was used on cybershot and other models (except W series), the Walkman 2.0 was used on the new walkman phones like W850, W880 and etc... which made them very good choice for listening to music...
The new media player (more looks like a media center to me ) named as walkman 3.0 was released with the K850, bringing totally new interface, better, more options and sound quality... Correct me if i'm wrong...
I hope this makes the things easier

Good analysis.
One thing that has agravated me about Walkman player - in W800 walkman player and also the K750 mediaplayer you could sort music by the order in which it was copied to the phone. My K800 doesn't have this option, so the K800 player is actually a downgrade in some ways to the K750 mediaplayer.
I often listen to music where I have all my latest additions to the phone as those I want to listen to the most. Without the "sort as created" function it can be a hassle going thorugh ALL the songs on the phone trying to find the recent additions.

If you have applied the patch, selected the "folders for scanning", scanned the library and turned off silent mode, there is no reason why the KD player wont play the songs :S

Dude that is SO weird that your K800 cannot do this! My K790a can. I add music even in a batch (selecting say 15/20 tracks at a time before adding them to the Playlist and boom the order I "Checkmarked" them is the order they're set to. IF I change this then I don't think I have "sort as created" function. Actually I better go see if its there in my branded K850i.
