Ok, after days of searching and trying settings, creating new profiles, deleting profiles, starting from scratch, etc... etc.. I JUST GOT IT WORKING!!!! I tested by sending a picture from my MyPix account to my own phone, and I just sent a picture to my friend in Texas, which it went through and the message disappeared from my OutBox (which it wouldn't if it didn't send properly).
Here are the steps I followed.
Please mind that this is for MMS settings on a K810 being used on Rogers Wireless in VANCOUVER. IPs may be different.

Menu > Settings > Connectivity > Data Communication > Data accounts > New account > PS data
Name: Rogers
APN: goam.com
Username: wapuser1
Password: wap
Select Rogers
Now goto:
Menu > Settings > Connectivity > Data Communication > Internet settings > Internet profiles > New profile

Connect using: Rogers
Press Save
Highlight Rogers > More > Settings

Use proxy: Yes
Proxy address: 172.025.000.107 (or 172.025.0.107 is the same)
Port Number: 80
Select Rogers, and click on Internet and goto the page you want
Menu>Messages>Settings>Picture Message>MMS Profile>New Profile:
MMS Profile Name: Media1
Message Server: http://mms.gprs.rogers.com
Internet Profile: Rogers
