wlel as you all know lndon, united kingdom is GMT +0 whereas my N95's timezone says: Timezone - GMT +1.00 London
why?

Don't think you can. I can't find it in the settings in the phone.
I think the phone is sencing that DST is on based on the calendar and the country you choosen on the initial setup. |

i chose UK, does yours appear as GMT +1.00 when you choose UK>London?
