settings -> connectivity -> mobile networks -> GSM/3G networks
choose GSM and 3G or GSM only

well, the section of the manual where you find this command also says
"Your phone also switches autmoatically between GSM and 3G (UMTS) networks depending on availability. Some network operators allow you to switch networks manually, as searching for unavailable networks consumes battery power"

I want to do the opposite - turn off GSM and run on only 3G. This worked fine on the Symbian-based M600, but the K800 lacks the option |

sillie, that definately sounds like a branding issue. My Nokia 7600 was originally on 3, and it kept seeking a 3G network when I only had 2G, and the menu option had been deleted.

Yes, but I had to do it myself using not-so legitimate software.
