lol, fascinating invention.
for you to know, mangu is nothing more than mashed green bananas or plantains with fried onions on top and most of the time is served along fried eggs, fried white cheese (queso blanco de freir) or some kind of meat as pork chops (chuletas), Pork ham (jamoneta) or any kind of salamee (pork, meat or chicken). Very delicious.

Here there are some sort of wheat salad called Tipile (which is your Spring Tabbouleh).
Also we have food that originally came from north africa such as empanada, Quipe, dedito de pollo and all those plepla that we normally use as entrees.
