The letters "ä, ö, ü" just have a different pronunciation, the "ß" is double "s", as in "Straße" (street).
There's no ß on non-german keyboards, so people from other countries have to write "Strasse", which the Germans understand aswell, but "Straße" is the correct way.
Also, in words like "Straße", "groß", etc., the "a", "o", etc. are pronounced longer (compared to words with double s), as "aa", "oo".
