I was looking to get a phone abroad (Hong Kong) and bring it back for use in UK. Will battery life be affected, as I was checking the website, it said 3 hours talktime... but this depending on the network and usage.

Because it will be used on foreign network...ie t-mobile, will this affect the phone's performance in any way?

I don't think it should, cos if you have good signal, it means it's not making much effort cos it's close to some antenna, meaning less battery draining. suppose thats what it refers to with 'depending on network'

Same battery life wherever it is used, unless if you are using a fake/replacement one. This is possible even when buying a brand new handset.
