Yeah go for it, is it quite easy to install and revert back to if you don't like it?
is it right that your X10 has to be rooted?
I'm trying to find some easy install instructions for all this but it seems a lot of messing about.

Yes, it has to be rooted. The installation process is quite easy as long as you have the proper ADB drivers installed and debugging activated on your phone. No idea about reverting as I love the black version.
Once you unpacked it you'll find some batch files that guide you through the process.

I notice there's a few root methods, can you provide a link to the best one please.
I see theres even a one-click root method like this which also says you can revert back http://www.xperiax10.net/2010[....]x10-and-x10-mini-in-one-click/
I don't know which one is the best one to trust...

I used the method you linked to, the UniversalAndroot.apk. There's a thread on XDA with the latest version in it, don't know if xperiax10.net linked to that version or a previous one.

Theres a lot of people saying that with R2BA026 on their X10 which I also have as it's the latest firmware that method says their phone was rooted but actually didn't root it. Some people get other errors with their phones also. Really don't know which method to trust.

Single click root method worked perfectly for my X10 mini, Try it man, What to lose ?
