If you've heard anything on this subject please let me know. My P800 isn't out of date yet but I'd like to future-proof it without relying on SE.

Is it possible to get into a situation where flashing can't fix the phone? - it not I'm gonna buy Fighter or DiV and start messing with it.

Have you looked inside your P800?

The P900 has a set of test points near the memory card slot
that looks like 2 rows of 10. Hmm, I thought, this might be
JTAG.

I have got as far as measuring voltages on these pads and
they seem to agree with what you would see on JTAG.
The next step is to solder a connector onto the board
and make up an adapter cable to a standard ARM 20-way
header.

Then it should be just a matter of using your favourite JTAG
debugger - that handles ARM9 - you can then dump the entire ROM, fiddle with it, and put it back into flash.

The only other complication is: there might be another test
pad somewhere for JTAGEN which will have to be wired high
on startup to enable JTAG.

What exactly do you mean by JTAG - some sort of programmable eeprom that the phone stores it's OS on?

Don't know what you're talking about but it sounds interesting!
