I've found a handy guide for O2UK users of
K700i who would like to set up their phones to send and receive email. The guide actually refers to the T68(i)/T300 phones but the settings work just fine for the T610/T630/K700 etc....

http://www.sonyericsson.com - look under their support section, this lets you send out e-mail settings also.
