Hi,
If I remove SIM card from Sony T610, will I loose all phone numbers or SMS messages from phone memory.

No, but you will lose messages (not numbers) if you put a different sim card in

and what if I upgrade my phone with new firmware. Will I loose my pictures, directory information and what else???

It depends on what FW you install on your phone. Some wipe it, some don't.
