It would appear that ANY image I add to the phones memory card is displayed when viewing the My Stuff > My Images folder on the handset - which is kinda annoying as I don't want ALL my images displayed at once. Folders can be created, but only on the handsets internal memory.

Suggestions for better managing images etc?

nope, unfortunately not. It's just like SE's media center, will display any pictures stored.
