PS = Packet switched, aka GPRS/3G, where data is swapped in packets.
CS = Circuit switched, the old-fashioned dial-up method, where you open up a fixed circuit for data.
At least, that's my interpretation.

If you select 'CS only' then you can only make a CS type connection as described above. You will not be able to make a GPRS / 3G connection, indeed I think you will find that the phone won't even connect to GPRS / 3G, it'll say 'gprs detached'.
If you set the phone to 'PS only', then you can make a GPRS / 3G connection, but not a CS connection at the same time as the GPRS / 3G connection is active. The implication of this is that you can't receive a call (which is CS) while your GPRS / 3G connection is active.
Setting the phone to automatic would normally be best, when you can have either connection and receive calls whilst your GPRS / 3G connection is active.

set to CS only for me, than my phone doesn't care for gprs (me neither), but 3G is working fine (mms/wap/data/visio).
The "CS" setting was said in differents FAQ to improve battery

Exactly, to save battery! I have it set to CS and ONLY WHEN I GO TO INTERNET the GRSP kicks in and connects. When done, the GPRS detached automatically, saving battery.

Another benefit of that, as well as battery life, is that the GPRS triangle above the signal bar only goes blue when GPRS is active, this is useful for the more paranoid among us who wonder if we are running up a bill of £££s when surfing using WiFi, because the globe icon appears on both types of connection... it was set like that by default on my phone!
