Can I use a Vodafone UK or O2 APN with a 3rd party WAP gateway, and if so how do i do it?

Try this:
WAP Services>
Options>
WAP profiles>
Add profile?>
Call it Halebop>
Connect using> (choose the data account you use to connect to WAP)
IP address 194.237.106.73
WAP Services>
Select profile> (select Halebop)
Begin using WAP
