How to configure the application list?

Maybe easy, but I really cannot find. I got the usual list of short cut: 1 - key lock, 2 - silent mode, ..., # - application.

Under # application, I got a list of 10 applications shortcut. How can I manage this list? I'd like to replace some application and cannot find how to manage this.
